Recipe Review...Pork Loin with Apricot Rosemary Glaze from Betty Crocker

I found this recipe in an old Betty Crocker Magazine.  It looked good so I decided to give it a go....

I studied the recipe and gathered my ingredients...

3-lb pork loin roast
teaspoon salt
teaspoon pepper
cup apricot preserves
cup dry sherry, cooking sherry or apple juice       (I used apple juice)
teaspoons dried rosemary leaves, crumbled
cloves garlic, finely chopped (I never use fresh garlic because I am a garlic wimp....I used garlic powder and very little ) 
  1. Heat oven to 350°F. Trim fat from pork. Place pork in 13x9-inch glass baking dish. Sprinkle with salt and pepper.
  2. In 10-inch skillet, heat preserves, sherry, rosemary and garlic over medium heat, stirring frequently, until thickened. If necessary, mash apricot pieces with fork into small pieces. Spoon 1/4 cup apricot mixture onto pork (reserve remaining apricot mixture). Insert meat thermometer so tip is in center of thickest part of pork.
  3. Bake uncovered 1 hour 15 minutes to 1 hour 30 minutes or until thermometer reads 155°F. Cover pork with foil; let stand 15 to 20 minutes or until thermometer reads 160°F. (Temperature will continue to rise about 5°F, and pork will be easier to carve.) Cut pork into slices. Heat remaining apricot mixture; serve with pork. (I cooked mine for 1hour and 30 minutes)
Makes 10 servings

It was a very good recipe.  I would give it an 8.5/10 on my cooking scale.  Next time I will make more of the glaze.  I felt like I needed more on the pork loin.

Restaurant Review...Scratch Bakery, Durham NC

Josh, Steph, Caleb, and I decided to check out Scratch Bakery in downtown Durham.  I had been hearing good things and also have seen positive write-ups in several magazines.  Now it was time to see for ourselves.....So off we went....We parked and made our way to the bakery.

We made it to the bakery...Here is their mission statement....
"Scratch provides quality driven, hand crafted food.  We support and nurture relationships with our local farmers and producers and are proud to be a part of Durham's growing vibrant food community".....
Ok....let's check it out...

We really enjoyed our visit to Scratch. I loved the coffee and my donut muffin.  You could tell that everything was made from fresh ingredients.  Can't wait to visit again, hopefully soon...

Get out and try a new restaurant.  I suggest you give Scratch Bakery a try.

Restaurant Review, Geer Street Garden, Durham NC

A couple of days ago Steph, Josh, Caleb and I decided to visit a restaurant in downtown Durham.  We  set the GPS and off we went to Geer Street Garden. We had heard good things.
A few sights along the way...

"Geer Street Garden is a restaurant and bar located in the former Fletcher's Gulf Station on the cover of Foster and Geer Streets in downtown Durham NC.  We serve simple, down home food and drinks in a relaxed atmosphere. The basic idea is that everyday food should be wholesome and delicious.  We have a large outdoor patio that's a perfect place to meet your friends and neighbors for a pint of beer and a local pasture raised burger."....Sounds great to me:-)

 The food was fresh and delicious.  Friendly staff too! Steph and I loved the pimento cheese appetizer and the fried green tomatoes.  Josh loved the burger. Caleb loved everything:-)

We had a very nice experience at the Geer Street Garden.  I would like to back and take the rest of the family.
Get out and try a new restaurant.
