Lemon Thyme Chicken (May 15, 2010)

Now it is time to start dinner.  I found a recipe in "Taste of the South" magazine that looked good so I again gathered my ingredients.

  1. 3/4 cup mayonnaise
  2. 2 tablespoons chopped fresh thyme
  3. 1 1/2 teaspoons fresh lemon zest
  4. 3/4 teaspoon salt
  5. 1/4 teaspoon ground black pepper
  6. 1/4 teaspoon garlic powder
  7. 6 boneless, skinless chicken breasts
  8. 1/2 cup freshly grated Parmesan cheese
  9. Garnish: fresh thyme sprigs
  1. Preheat oven to 350°. Line a rimmed baking sheet with aluminum foil; set aside.
  2. In a small bowl, combine mayonnaise, thyme, lemon zest, salt, pepper, and garlic powder. Liberally brush mayonnaise mixture on both sides of chicken. Place chicken on prepared pan.
  3. Bake for 50 minutes.
  4. Sprinkle tops of chicken breasts with Parmesan cheese. Bake until cheese is melted, 5 to 10 minutes.
  5. Garnish with thyme sprigs, if desired.
  6. Serve over Angel Hair Pasta with Tomatoes, if desired.

Dinner is served:-)

The chicken was good although it took some time to put it all together.  I would probably give it a 8/10 on my cooking scale.

I would be lost in my cooking without Brodie's supervision.
He was always underfoot hoping for something to drop.
Happy cooking everyone!:-)
